Blind Assessment
Delicately complex, sweet-toned, balanced. Almond, roasted cacao-nib, sweet lime, honeysuckle-like flowers in aroma and cup. Gently crisp, nuanced acidity; buoyant, lightly syrupy mouthfeel. Most flavor notes carry into a long, sweet-toned finish.
Notes
Doi Chaang is a single-estate coffee produced by a northern Thailand hill tribe in the Golden Triangle mountains of Thailand. Moriah Coffee is a small independent roaster based in Taiwan whose founder writes that he has been called by God to produce fine coffee that is naturally low in acidity and other irritants but still delivers great pleasure, and that God assisted him in learning how to roast coffee that fulfills that call. Who Should Drink It
Those who avoid assertively bright intensity and prefer instead a gently lively, sweetly nuanced cup like this one.
