Blind Assessment
Deep, resonantly floral. Roses, wisteria, nectarine, fresh fig, cocoa nib, sandalwood in aroma and cup. Brightly sweet, soaring acidity; syrupy mouthfeel. The finish is deep, cleanly layered with floral and sandalwood notes.
Notes
Produced by husband and wife Galo Morales and Maria Alexandra Rivera and their family at Finca Cruz Loma, entirely of the Sidra variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented in an oxygen-free environment before drying. Sidra is an Ethiopian variety of coffee that at some unknown point in its history was selected and brought to Ecuador, then to nearby Colombia.
