Blind Assessment
Crisply but pungently sweet: molasses, fir and flowers in aroma and cup. Gentle acidity, lightly syrupy mouthfeel. The flavor fades in the finish but the sweetness remains.

Produced from trees of the Bourbon and Typica varieties at an elevation of approximately 4,800 feet by farmer Ernesto Pacas Diaz and his wife Blanca Estela on the award winning Santa Sofia farm.
