Blind Assessment
This espresso, dominated by a musty flavor, showed best at a rather quick extraction, which encouraged the mustiness to read as crisply effervescent, exhilaratingly spicy cocoa. Extremely heavy body and rich crema. Carries very well in milk.
Notes
Extremely heavy body and rich crema. Carries very well in milk. A dramatic, unconventional blend designed for milk drinks by Espresso Vivace owner David Schomer, an outspoken and influential American espresso educator.
Who Should Drink It
Aficionados who pull their espresso carefully will enjoy this blend for its flavor intrigue and dense body. At a slow extraction the mustiness can be bitter and dominating and requires sugar even when married with milk. However, at a relatively quickly paced shot of, say, 17 or 18 seconds after the first drop, the mustiness is tickly, rich, and exhilarating.
