Blind Assessment
Elaborately rich and fruit-forward. Ripe strawberry, sandalwood, violet-like flowers and a hint of rye whisky in aroma and cup. Richly and roundly tart acidity; velvety mouthfeel. Long, clean finish is saturated with strawberry and sandalwood.
Notes
Southern Ethiopia coffees like this one are produced from traditional Ethiopian varieties of Arabica long grown in the region. This is a “natural” or dry-processed version, meaning the beans were dried inside the fruit, encouraging a flavor profile that is less predictable and deeper than the more familiar wet-processed floral- and citrus-toned southern Ethiopia profile. Like virtually all Yirgacheffe coffees, this coffee is produced by villagers on small, garden plots interplanted with food and other subsistence crops. ChacolaTAY is a Taiwanese small-batch roaster aiming to maximize cup character of elite green coffees through flexible, precise artisan roasting.
