Blind Assessment
Crisply fruit-toned. Dried red apple, magnolia, almond, orange zest, oak in aroma and cup. Sweet-tart structure with brisk acidity; lightly satiny mouthfeel. Orange zest and almond notes lead the subtle, satisfying finish.
Notes
The Yirgacheffe region produces distinctive coffees from traditional landrace varieties of Arabica long grown in the area. This is a “natural” or dry-processed version, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. Cimarron Coffee Roasters is a micro-roaster on the Western Slope of Colorado that aims to offer sweet, clean, affordable and sustainable coffee. Roast profiles are developed for each coffee to highlight the inherently distinctive properties of each lot. Shipping is included in the coffee price. Bottom Line
A quietly pleasing dry-processed Yirgacheffe cup with leading notes of citrus supported by sweet almond undertones.
