Blind Assessment
Intensely floral and deeply chocolate-toned. Rose and night-blooming flowers, dark chocolate, passion fruit, musk, fresh-cut fir in aroma and cup. Quietly rich but backgrounded acidity; full, lightly syrupy mouthfeel. Flavor consolidates in a crisply drying finish.
Notes
Yirgacheffe is a coffee region in southern Ethiopia that produces distinctively floral- and fruit-toned coffees from traditional varieties of Arabica long grown in the region. This is a “natural” or dry-processed Yirgacheffe, meaning the beans were dried inside the fruit, encouraging a flavor profile that is lower-toned and more pungent than the more familiar wet-processed Yirgacheffe floral- and citrus-toned profile. ChacolaTAY is a Taiwanese small-batch roaster aiming to maximize cup character of elite green coffees through flexible, precise artisan roasting. Who Should Drink It
Those who enjoy deeply resonant floral and chocolate character in a brisk, slightly roast-toned presentation that quiets the usual Yirgacheffe acidity.
