Blind Assessment
Deeply aromatic, sweet-savory. Grape candy, dark chocolate, lavender, shiitake mushroom, cedar in aroma and cup. Sweetly savory structure with gentle, round acidity; full, syrupy mouthfeel. Savory-tending finish consolidates to notes of Shiitake mushroom and lavender.
Notes
Southern Ethiopia coffees like this one are largely produced from distinctive indigenous Ethiopia landrace varieties of Arabica long grown in the region. Processed by the natural anaerobic method (whole fruit is fermented with limited oxygen before drying). Coffee Please is an artisanal roastery and cafe in Taipei’s Beitou District, famous for proximity to the Yangming Mountain hot springs. Visit www.facebook.com/CoffeepleaseTW for more information.
Bottom Line
An intriguing anaerobically processed Ethiopia cup that takes a complex lean toward the savory end of the sensory spectrum.
