Blind Assessment
Evaluated as espresso. Lush, sweet, musky. Lily, peach, guava, chocolate in aroma and small cup. Full, syrupy mouthfeel. Very sweet finish with a slight drying edge. Fat and nicely nuanced in three parts milk: continued peach, guava, chocolate.
Notes
A blend of coffees from the Yirgacheffe and Guji growing regions. Southern Ethiopia coffees like these are produced from traditional Ethiopian varieties of Arabica long grown in the region. These are “natural” or dry-processed versions of the type, meaning the beans were dried inside the fruit, encouraging a flavor profile that is less predictable and deeper than the more familiar wet-processed floral- and citrus-toned southern Ethiopia profile. In addition to his retail roasting operation, Aroma Roast Coffees, Simon Hsieh also operates Soaring Phoenix Trading, a business focused on purposed-built commercial espresso blends and high quality single-origin coffees. Who Should Drink It
Lush, dried-in-the-fruit character for those who love the type. Performs particularly well in milk.
