Blind Assessment
Deeply sweet, cocoa-toned. Dark chocolate, dried persimmon, hazelnut, wisteria, maple syrup in aroma and cup. Balanced, brisk but sweet structure with rounded acidity; satiny-smooth mouthfeel. The finish is thoroughly chocolaty with undertones of persimmon and hazelnut.
Notes
Southern Ethiopia coffees like this one are largely produced from distinctive indigenous Ethiopian varieties of Arabica long grown in their respective regions. This is a dry-processed or “natural” version, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. Dory Coffee Roasters is a Taipei-based nano-roaster of specialty coffee. For more information, visit https://www.facebook.com/dorycoffee99/.
Bottom Line
A balanced, engaging natural-processed Ethiopia cup characterized by cocoa-toned fruit and rich florals.
