Blind Assessment
Sweet, complex, briskly floral. Honey, lavender-like flowers, cocoaish chocolate, hints of fir and mint in aroma and cup. Softly bright acidity; silky mouthfeel. Very sweet, flavor-saturated finish.
Notes
Yirgacheffe coffees like this one processed by the wet or washed method (fruit skin and pulp is removed before drying) typically express great aromatic complexity and intensity with a particular emphasis on citrus and floral notes. In addition to his retail roasting operation Aroma Roast Coffees, Simon Hsieh also operates Soaring Phoenix Trading, a business focused on purposed-built commercial espresso blends and high quality single-origin coffees. Who Should Drink It
A coffee exhilaratingly exotic in its aromatics yet cleanly articulated and classic in structure.
