Blind Assessment
Fruit-forward, sweetly fermenty. Plum wine, almond butter, sassafras, oak, baking chocolate in aroma and cup. Sweet-savory structure with gentle, fruity acidity; full, viscous mouthfeel. Chocolaty finish, supported by notes of plum wine and sassafras.
Notes
Produced at Finca Potosi from trees of the rare Tabi variety of Arabica and processed by the anaerobic natural method (whole fruit subject to oxygen-restricted fermentation before drying). Founded in 2013, modcup coffee focuses on fresh roasting and distinctive natural-processed coffees. Visit modcup.com for more information.
Bottom Line
An intentionally fermenty anaerobic-processed Colombia cup with a jammy, gently alcoholic aroma and flavor and undertones of baking chocolate and fresh-cut oak.
