Blind Assessment
Very sweet, orangey and chocolate-toned. Ripe mandarin orange, dark chocolate, hazelnut, freesia-like flowers, cedar in aroma and cup. Sweet structure with tart, citrusy acidity; crisp, satiny mouthfeel. Sweetly citrusy, wood-framed finish with undertones of dark chocolate.
Notes
Produced by Felipe Arcila of Jardines del Eden, entirely of the Castillo variety of Arabica, and processed by an experimental method in which the beans, with skins removed but still encased in fruit flesh, are fermented with wine yeasts and orange pulp before drying.
