Blind Assessment
Sweetly tart, spice-toned. Violet, thyme, honey, hazelnut, cedar in aroma and cup. Juicy, balanced acidity; delicate, silky-smooth mouthfeel. The gently drying finish consolidates to violet and hazelnut in the short with suggestions of rich, aromatic cedar in the long.
Notes
From trees of the heirloom Bourbon variety and processed at prize-winning Gitesi mill. Rwanda’s impressive potential as fine coffee producer has come to fruition over the past decade owing to the industry of its growers, generous support from international aid agencies, and the commitment of North American specialty coffee roasters. Cimarron Coffee Roasters is a micro-roaster on the Western Slope of Colorado that aims to offer sweet, clean, affordable and sustainable coffee. Roast profiles are developed for each coffee to highlight the inherently distinctive properties of each lot. Shipping is included in the coffee price.
