Blind Assessment
Deep, chewy, chocolaty. Raisiny dark chocolate, ripe plum, a shimmer of lantana-like flowers in aroma and cup. Round, deep acidity; plush mouthfeel. The raisiny chocolate note carries into a rich, gently drying finish.
Notes
This is a dry-processed or “natural” coffee, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. It is certified organically grown on a small, family-owned farm. Shearwater is a micro-roaster located in Fairfield County, Connecticut. Its entire facility and coffees are certified organic. Shearwater strives for both sustainability and excellence. Visit www.shearwatercoffeeroasters.com or call 203-292-0848 for more information.
Who Should Drink It
Deeply expressed, fruity dark chocolate is the appeal here, along with a general impression of plush viscosity. Not a classic coffee, but a distinctive one. Excellent social and environmental credentials.
