Blind Assessment
Fruit-toned, sweetly tart. Strawberry guava, lemon balm, dark chocolate, tangerine zest, cane sugar in aroma and cup. Sweetly tart with bright, juicy acidity; lightly syrupy mouthfeel. Delicately fruity finish with undertones of strawberry and deep chocolate.
Notes
A blend of coffees from Miranda Farms and JN Farms, from trees of the Red Catuai, Red Bourbon, Typica and Yellow Caturra varieties of Arabica, and processed by a proprietary method called “champagne natural,” in which fermentation using a wine yeast strain is applied to the whole fruit before it is dried. Paradise prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
Bottom Line
An elegant, confident wine yeast-processed natural Ka‘ū from Hawai’i — tropically fruity with gravitas from rich chocolate tones throughout.
