Blind Assessment
Richly pungent: scorched cedar, cardamom-like spice, and, particularly in the cup, a pleasant hint of dark chocolate. Lean mouthfeel with some silkiness. The chocolate hint carries into a rather sweet, rich finish.

This coffee has been treated to reduce acids and the acidy sensation that may create gastric discomfort in some people. The acid-reduction procedure is applied to the coffee in its green state, before roasting, and is entirely “natural,” meaning only hot water and steam are used. The acidy sensation is further reduced in this particular coffee by a relatively dark roast.
