Blind Assessment
Pungent, deep, slightly musky. Distinct dark chocolate, plum pudding, a musky note in aroma and cup. Roundly tart acidity; lightly syrupy mouthfeel. Flavor consolidates but persists in a rich finish.

This coffee was produced entirely from trees of the Pacas variety of Arabica, a compact-growing mutant of Bourbon first discovered and selected in El Salvador.
