Blind Assessment
Tropically sweet, floral-driven. Star jasmine, mango, date, macadamia nut, amber in aroma and cup. Sweet-tart structure with gently bright acidity; delicately confident acidity. Resonantly fruit- and floral-toned finish.

Produced at Miranda Farms entirely of the Red Catuaí variety of Arabica and processed by the pink honey method, in which coffee is fermented in the whole fruit before skins are removed and the beans are dried with the pinkish-toned fruit flesh or mucilage still adhering to them.
