High-toned, elegant, fruit-centered. Passion fruit, lemon blossom, cocoa nib, marjoram, mesquite in aroma and cup. Deeply sweet structure with citrusy acidity; crisp, satiny mouthfeel. A balanced finish centers around passionfruit and cocoa notes with undertones of savory marjoram.
Notes
Produced entirely of the Yellow Caturra variety of Arabica, this coffee was processed in the whole fruit inoculated with a wine yeast strain and fermented in sealed bags (“anaerobic” ferment) before being dried using a combination of sun and mechanical methods.
