Blind Assessment
Delicate, lyrically sweet, gently tart. Tea rose, pink grapefruit zest, cocoa nib, fresh-cut oak, wild honey in aroma and cup. Sweet structure with gently bright acidity; plush, satiny mouthfeel. The finish consolidates to richly sweet notes of tea rose and honey with cocoa nib undertones.
Notes
Produced at Aloha Hills Farm entirely of the giant-beaned Maragogype variety of Arabica and processed by the pink honey method, in which coffee is fermented in the whole fruit before skins are removed and the beans are dried with the pinkish-toned fruit flesh or mucilage still adhering to them. Paradise Roasters specializes in micro-lot Arabica and Robusta coffees from Asia and other emerging origins. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
Bottom Line
A cleanly fruit-forward, uniquely composed Hawai’i cup from the huge-beaned, very rare Maragogype variety of Arabica.
