Blind Assessment
Intensely and complexly floral – lavender, rose, jasmine – with some citrus complication and rounded by a caramelly chocolate. Richly tart acidity; lightly but distinctly syrupy mouthfeel. Lemon and flowers carry into a deep finish.
Notes
Yirgacheffe is a coffee region in southern Ethiopia that produces distinctively floral- and fruit-toned coffees from traditional varieties of Arabica long grown in the region. Yirgacheffe coffees like this one processed by the wet or washed method (fruit skin and pulp is removed before drying) typically express great aromatic complexity and intensity with a particular emphasis on citrus and floral notes. “Great coffee. Full tilt” is the motto of Whipsaw Coffee, a small-batch roaster newly established in Canada’s southernmost city and dedicated to selecting green beans from all over the world and roasting them in a way that highlights the natural characteristics of each coffee.
