Delicately sweet, gently herbaceous. Cocoa nib, agave syrup, pansy, cedar, grapefruit in aroma and cup. Brisk, sweet acidity; crisp, velvety mouthfeel. Rich cedar notes support cocoa nib and grapefruit in the finish.

Produced by smallholding farmers, from trees of the Java and Catimor varieties of Arabica, and processed by the low-oxygen honey method, in which the beans are fermented in a low-oxygen environment with some of their muciilage still attached throughout the dying process.
