Blind Assessment
Richly cherry-toned, chocolaty. Dark chocolate, black cherry, pistachio, honeysuckle, cedar in aroma and cup. Gently sweet-tart structure with brisk acidity; lively, syrupy mouthfeel. The finish is all chocolate, through and through.

This coffee tied for the third-highest rating in a cupping of washed-process coffees from Central America and Mexico for Coffee Review’s September 2020 report. Produced by Rosalba Cifuentes of Mayan Village Coffee in Chiapas from trees of the Bourbon, Catimor, and Caturra varieties of Arabica and processed by the washed method.
