Blind Assessment
Delicately and complexly aromatic, levitatingly high-toned. Dried passionfruit, aromatic orchid, frankincense, cocoa nib, tangerine zest in aroma and cup. Elegantly sweet structure with rich, vibrant acidity; lively, silky mouthfeel. The very long finish centers around frankincense-toned passionfruit and aromatic orchid with a cocoa throughline.
Notes
This coffee took first place in the 2019 Best of Panama green coffee competition and subsequently was auctioned for the then highest price ever paid for a green, unroasted coffee: US$1,029 per pound. Produced from the celebrated Green Tip Geisha variety of Arabica and processed by slow-dried natural method, in which the coffee in the whole fruit is first sealed in bags, forcing it to ferment with limited exposure to oxygen, then spread to dry in the open on raised tables. Klatch Coffee is an award-winning small-batch roasting company in the Los Angeles area whose resident barista and trainer, Heather Perry, won both the 2003 and 2007 United States Barista Championships brewing a Klatch Coffee espresso blend. Bottom Line
An ethereal Panama Geisha cup, intricately balanced, infinitely deep, lyrically sweet.
