Blind Assessment
Richly fruit-forward, floral-toned. Lychee, tea rose, dark chocolate, orange zest, sandalwood in aroma and cup. Savory-leaning structure with bright acidity; full, satiny-smooth mouthfeel. Cedar notes support the crisply fruit-toned finish.
Notes
Produced by Jamison Savage of Finca Debra entirely of the Geisha variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented in an oxygen-free environment before drying. This particular fermentation, described as “extended,” was 100 hours in duration. Theory Coffee Roasters is a specialty roaster and coffee shop based in Redding, California. Bottom Line
A floral- and fruit-driven anaerobic natural Panama Geisha cup with leading notes of dark chocolate and rich aromatic wood.
