Blind Assessment
Crisply sweet-tart, floral-toned. Narcissus, plum, baking chocolate, almond, brown sugar in aroma and cup. Sweetly tart structure with vibrant acidity; satiny-smooth mouthfeel. The quiet finish centers around suggestions of brown sugar and almond.
Notes
Produced by Rudy Garay at Finca Peña Blanca entirely of the Catuai variety of Arabica and processed by the black honey method, in which the skins are removed from the fruit but virtually all of the pulp is allowed to dry on the beans, often resulting in a deep, pungent profile. Merge is a specialty coffee roaster in Harrisonburg, Virginia dedicated to ethical sourcing of high-quality coffees. Visit www.mergecoffeeco.com for more information.
Bottom Line
A cup paradoxically both delicate and deep, floral-driven with ballast from crisp chocolate notes.
