Blind Assessment
Richly sweet-savory. Baker’s chocolate, vanilla, thyme, pomegranate, spicy oak in aroma and cup. Brisk, sweetly-tart acidity; crisp, velvety mouthfeel. The richly drying finish consolidates around notes of pomegranate and thyme in the short, rounding to baker’s chocolate in the long.

Produced exclusively from trees of the Pink Bourbon variety of Arabica by Jose Antonio Trujillo of Finca La Reforma. This is a wet-processed or “washed” coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying.
