Blind Assessment
Floral, tropical, tangy. Star jasmine, lychee, sandalwood, molasses, pistachio in aroma and cup. Sweet-tangy structure with gently bright acidity; lavishly smooth mouthfeel. Finish consolidates to pleasing notes of lychee and sandalwood.
Notes
Produced entirely from trees of the admired Pink Bourbon variety of Arabica and processed by the anaerobic natural method (whole fruit is fermented with limited oxygen before drying). Ilustre is a micro-roastery based in Tijuana, Mexico and San Diego, California that works closely with top Mexican producers and specializes in sourcing the highest-quality coffees. It is an international brand that ships to both the U.S. and Mexico. For more information, please visit www.ilustrecoffee.com.
Bottom Line
A uniquely composed Colombia Pink Bourbon processed by the anaerobic natural method — suggests a tropical breeze in its floral and gently fermenty, fruit-toned levity.
