Blind Assessment
Clean, harmoniously balanced. Mulberry, lychee, marjoram, azalea, sandalwood in aroma and cup. Malic (apple-like) acidity; elegant, silky mouthfeel. Berry-toned finish supported by notes of sweet herbs.
Notes
This exciting coffee was selected as the No. 17 coffee on Coffee Review’s list of the Top 30 Coffees of 2024. Produced by seven smallholding farmers of Abishyizehamwe Hill, entirely of the Red Bourbon variety of Arabica, and processed at the Humure Station by a 72-hour low-oxygen fermentation in the whole fruit. Little Waves Coffee is a Latina-owned, women-forward company that provides livable wages for its diverse team. Visit www.littlewaves.coffee for more information.
Bottom Line
A delicate, enticing, richly sweet Rwanda processed by a natural method that is a kind of “soft anaerobic,” as some oxygen is allowed during the whole-cherry fermentation process.
