Blind Assessment
Evaluated as espresso. Deep, pungent, complex. Dark chocolate, black cherry, musky lily, hints of oak and thyme in aroma and small cup. Plump, satiny mouthfeel. Lily and oak in particular carry into a crisply sweet finish. Maintains pungent authority in three parts milk: fudgy chocolate, cherry, oak.
Notes
Produced on the admired farm Fazenda Santa Ines and processed by the pulped natural or “honey” method, in which the skin is removed from the coffee fruit immediately after picking, but the seeds or beans are dried with all or part of the sweet pulp, or fruit flesh, still adhering to them. Paradise Roasters specializes in micro-lot coffees and espressos from Hawaii and other premier coffee growing regions. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
Who Should Drink It
A versatile espresso, richly expressive and complex as a straight shot while maintaining its character and authority in milk.
