Blind Assessment
Evaluated as espresso. Sweet-toned, buttery character: dark chocolate and apricot in the aroma, complicated in the small cup by more pungent notes of anise and cedar. Lightly syrupy, balanced mouthfeel; rich, long finish. In two parts milk crisp, smooth, balanced: milk chocolate, almond, a hint of orangy or apricot-like fruit.

From Fazenda Córrego Seco in the recently developed Chapada Diamantina growing region. Processed by the pulped natural or “honey” method, in which the skin is removed from the coffee fruit immediately after picking but the seeds or beans are dried with the sweet pulp, or fruit flesh, still adhering to them. Paradise Roasters prides itself on roasting and shipping coffee only after orders are placed.
