Blind Assessment
Evaluated as espresso. Sweet, intricate, pungently floral. Baker’s chocolate, grapefruit, lavender, stone fruit in aroma and small cup. Lightly satiny, lively mouthfeel. A crisp, floral-toned chocolate dominates in the finish and carries with brisk elegance into three parts milk.

Coffee from the Toraja region of the Indonesian island of Sulawesi, colonial name Celebes, typically displays a wild and often earth-toned character, the result of unorthodox methods of fruit removal and drying. This Sulawesi, however, is a wet-processed or “washed” processed coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying, which netted an impressively original, cleanly pungent and floral profile, nicely displayed in this fine espresso.
