Blind Assessment
Intense woodsy aroma suggesting fresh-cut pine with a hint of chocolate. Balanced acidity and smooth mouthfeel. In the cup sweet, mildly fermented fruit tones read as a heavy dark chocolate with continued crisp aromatic wood complication. Both tendencies carry into a finish in which sweetness outlasts a mild astringency.
Notes
Certified organic and Fair Trade, meaning this coffee was purchased from small-holding farmers at a "fair" or economically sustainable price. Named for the nearby Koro Caves, a portion of the proceeds from the sale of this coffee will go towards rebuilding an orphanage that was damaged by fire.
