Blind Assessment
Richly sweet, balanced. Pomegranate, vanilla bean, rum barrel, lemon yogurt, honey in aroma and cup. Sweet-savory structure with brisk acidity; lightly satiny mouthfeel. Crisp, fruit-toned finish with hints of rum barrel and vanilla.
Notes
Produced by Domenico Celli Borrero at Finca Tanamá, from trees of the Typica 401, Fronton, Bourbon and Limani heirloom varieties of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented in an oxygen-free environment before drying. Forgotten Forest is a coffee producer and roaster in Puerto Rico dedicated to reviving production of local heirloom coffee varieties. Visit www.forgottenforest.com for more information.
Bottom Line
An experimentally processed Puerto Rico coffee with tart fruit, lactic tang and intentionally promoted sweet ferment notes.
