Blind Assessment
Evaluated as a green coffee sample-roasted to light-medium. Nuanced, richly bittersweet. Aprium, walnut, lime zest, oak, lily in aroma and cup. Round, quietly tart acidity; full, creamy mouthfeel. Aromatic finish with notes of lime zest and walnut.

Produced by Wilton Benitez of Granja Paraiso 92, entirely of the Colombia variety of Arabica, and processed by proprietary techniques involving detailed control of disinfection, fermentation, drying and storage. Supplied as a green (unroasted) coffee. Roasted for evaluation purposes by Coffee Review on an ARC S sample roaster.
