Blind Assessment
Crisply pungent, complex in structure and aromatics. Fine balance of sweet, tartly dry and savory: dark chocolate, brown sugar, black currant, blackberry, a hint of white sage in aroma and cup. Brisk but juicy acidity; lightly syrupy mouthfeel. Balanced, gently rich short finish with some chocolate and molasses notes surviving in the long.
